Ingredients
4 serving servings

600 grams butter beans canned

250 grams Passata sieved tomatoes

2 small courgettes finely diced

2 finely chopped onions

2 carrots finely diced

2 garlic cloves peeled and crushed

4 tomatoes

600 milliliters vegetable stock or beef stock if you prefer

freshly ground peppercorns

salt

chopped basil as desired

freshly grated Parmesan cheese

olive oil cold pressed

wholemeal bread to serve

Directions
1.
Drop the tomatoes into boiling water for a few seconds, then skin, halve, deseed and finely dice. Heat 2 tbsp oil in a pan and sweat the onions, carrots, courgettes and garlic over a low heat for 2-3 minutes, stirring. Add the strained tomatoes. Cook over a very low heat until reduced slightly, then add the stock. Bring to the boil, stir in the diced tomato and simmer over a low heat for about 10 minutes. Stir in the drained beans and basil leaves and cook gently for a further 1 minute. Then season to taste with salt and pepper. Sprinkle with Parmesan and serve with hearty wholemeal bread.
