For the skewers
1 slice white bread day-old, crust removed
500 grams minced lamb
1 finely chopped garlic clove
4 onions 1 chopped, 3 in wedges
1 chopped red chilli slit open, deseeded
1 tablespoon oil
1 egg
0,5 teaspoon ground cumin
0,5 teaspoon ground coriander
8 skewers metal or wooden
oil for the barbecue
For the tomato sauce
1 tablespoon olive oil
1 finely chopped garlic clove
1 piece finely chopped ginger walnut-sized
1 finely chopped onion
1 tablespoon brown sugar
3 tablespoons lime juice
240 grams chopped tomatoes
100 milliliters vegetable stock
4 stalks finely chopped coriander reserve a few leaves to garnish
Directions

1 For the skewers: soften the bread in water for 3 minutes. Mix the mince in a large bowl with the garlic, onion and chilli. Squeeze the water out of the bread and add the bread to the bowl. Knead in the egg with the cumin and coriander. Season generously with salt and ground pepper.
