For the marinade
2 finely chopped shallots peeled
0,5 finely chopped red chilli
2 finely chopped garlic cloves
1 centimeter ginger
5 tablespoons peanut butter
1 tablespoon tamarind paste
2 tablespoons soy sauce
100 milliliters coconut milk
1 teaspoon palm sugar or dark brown sugar
1 tablespoon fish sauce
1 lime juiced
8 chicken legs boned and skinned and cut in half
In addition
1 carrot peeled
1 courgette
1 yellow pepper seeded and finely sliced
1 red pepper seeded and finely sliced
1 tablespoon rice vinegar
1 tablespoon sugar
1 teaspoon salt
Directions

1 Mix together the marinade ingredients and pour half over the chicken pieces. Leave to marinate for at least 4 hours or overnight.
