2 mangos stoned, peeled and sliced

2 - 3 chicken breasts cooked and shredded

1 finely chopped red chilli deseeded

12 rice papers pancakes or sheets, not rice paper

For the dipping sauce

75 milliliters soy sauce

1 teaspoon ginger

0,5 finely chopped red chilli seeded

1 lime juiced

1.
1 Soak the vermicelli according to packet instructions and drain once rehydrated. Place in a bowl and add the vinegar and fish sauce, then add the rest of the filling ingredients and mix carefully.
