100 milliliters iced water plus extra as needed

For the filling

600 grams gooseberries fresh or frozen, thawed if frozen

300 grams caster sugar plus extra for dusting

35 grams cornflour

0,25 teaspoon ground nutmeg

1 large egg beaten with 1 tbsp milk
