1 lemon zest thinly pared with a vegetable peeler

25 grams cornflour
drop yellow food colouring
320 grams vegan puff pastry
1 teaspoon ground cinnamon
Directions

Put the soya milk, coconut milk, icing sugar, lemon zest and cinnamon stick in a saucepan. Bring to a simmer, then leave to infuse off the heat for 10 minutes.
