For the pancakes

4 large eggs

2 large egg yolks

100 grams almond flour

0,5 teaspoon baking powder

0,5 teaspoon bicarbonate of soda

75 milliliters unsweetened almond milk

1 tablespoon tamari soy sauce

1 teaspoon granulated stevia

cooking spray e.g. olive oil or coconut oil

For the filling

2 tablespoons avocado oil

2 medium carrots peeled and cut into batons

75 grams mushrooms cleaned and sliced

75 grams bean sprouts

2 spring onions green tops only, sliced

2 tablespoons finely chopped coriander

salt

freshly ground black peppercorns

1 For the pancakes: Combine everything for the pancakes in a food processor or blender, apart from cooking spray. Blend on high until smooth and then let the batter rest for 5 minutes.
