Ingredients

10 chicken legs

2 tablespoons coconut oil

4 waxy potatoes peeled and thickly sliced

200 grams crunchy peanut butter

800 milliliters coconut milk canned

3 stalks lemongrass squashed

1 cinnamon stick

2 yellow peppers seeded and cubed

150 grams mushrooms sliced

100 grams baby spinach

fish sauce to taste

caster sugar to taste

50 grams salted peanut kernels

sprig coriander

rice steamed, to serve

For the curry paste

4 yellow chillies seeded and sliced

2 tablespoons chopped galangal

2 tablespoons chopped fresh root ginger

3 shallots

6 chopped garlic cloves

1 teaspoon shrimp paste

1 teaspoon ground turmeric

2 teaspoons ground coriander

1,5 teaspoons ground cumin

0,5 teaspoon white pepper

Directions
1.
First make the curry paste. Pound all of the ingredients in a large mortar and pestle until reduced to a paste. Alternatively, put all of the ingredients in a blender with a splash of water or oil and blend until smooth.
