Ingredients
4 serving servings

200 grams long grain rice

1 large carrot diced

2 large eggs

400 grams black-eyed beans canned, rinsed and drained

1 yellow pepper halved, seeded and thinly sliced

75 grams black olives pitted

2 limes juiced

3 tablespoons olive oil

10 grams chopped flat-leaf parsley

10 grams chopped coriander

cavolo nero steamed, to serve

salt

freshly ground black peppercorns

Directions

Cook the rice and carrots in a large saucepan of boiling water for 10 minutes, then drain well. Plunge into a bowl of iced water to stop the cooking and remove the excess starch. Drain well, then spread out on a clean tea towel and leave to dry off for 15 minutes.
