Ingredients
4 Serving Servings

1 tablespoon chopped thyme

250 milliliters white wines

1 onion finely chopped

55 grams butter

300 grams carnaroli rice

750 milliliters hot vegetable stocks

1 garlic clove finely chopped

1 tablespoon extra virgin olive oil plus extra for drizzling

2 tablespoons finely grated parmesan

freshly milled peppercorn, black

1 head radicchio

Directions
1.
1 Slice the radicchio in half lengthways. Set 1 piece aside. Slice the other piece crossways into strips. 2 Heat the oil and half the butter in a wide shallow pan. 3 Cook the onions and garlic until soft, then add the radicchio strips and the rice and cook, stirring until the rice is translucent. 4 Pour in the wine and cook until absorbed. 5 Add the stock, a ladleful at a time and cook until absorbed before adding more. 6 Continue, stirring, until all the stock is used. Stir constantly until the rice is almost cooked, but still with a slight bite. 7 Heat the broiler (grill)8 Add the thyme, cheese and remaining butter to the risotto and season to taste with salt and pepper. 9 Season the reserved piece of radicchio with salt and pepper and drizzle with olive oil. Place on the broiler and cook, turning, for 7-10 minutes, until tender, reducing the heat towards the end of cooking time. 10 Slice the grilled radicchio and serve on top of the rice.
