8 egg yolks beaten
450 milliliters milk
110 grams superfine icing sugar
1 teaspoon vanilla extract
For the topping
6 tablespoons golden superfine sugar
To decorate
3 tablespoons coconut flakes
1 mango peeled, stone removed, flesh diced
icing sugar
Directions

1 Heat the oven to 160°C (140°C fan) 325°F gas 3. Lightly butter 6 ramekins. 2 Stir together the sugar and milk until the sugar has dissolved. Stir in the egg yolks and vanilla until smooth. 3 Strain through a sieve into the ramekins. Place the ramekins in a roasting tin or large baking dish and add enough hot water to come halfway up the ramekins. 4 Cook for 50-60 minutes until just set. Leave to cool, then chill in the refrigerator for at least 2 hours. 5 Heat the grill. 6 Sprinkle the custards with sugar and put under the grill until the sugar bubbles and caramelises. Alternatively caramelise the sugar with a blowtorch. 7 Top with diced mango and coconut and sift over a little confectioners' sugar.
