For the rice paper rolls

1 bell pepper seeds removed and cut into thin strips

12 rice papers wrappers

1 avocado peeled and cut into thin strips

50 grams pea pods

1 cucumber cut into thin strips

1 tablespoon chopped coriander

1 carrot cut into thin strips

For the chili dip

70 milliliters olive oils

1 shallot finely chopped

1 chilli pepper, green seeds removed and thinly sliced

1 chilli pepper, red seeds removed and thinly sliced

70 milliliters lime juices

To garnish

Directions

1 For the rice paper rolls: dip 1 wrapper in warm water for a few seconds, until just soft. Drain the excess water and place on a work surface. 2 Place a few pieces of the remaining ingredients on the wrapper, about 3cm|1 1/4 from the base. Fold up the bottom of the wrapper. 3 Fold in the sides and roll up to enclose the filling. Place on a tray and cover with a damp tea towel. 4 Repeat with the remaining wrappers and filling ingredients. 5 For the chili dip: put all the ingredients into a screw-top jar and shake vigorously. Tip into a serving bowl. 6 Tie a scallion around each rice paper roll and garnish with chives. Serve the rice paper rolls with the dipping sauce"
