200 grams onions
2 garlic cloves
2 tablespoons butter
100 grams streaky bacon
1 yellow pepper
1 - 2 carrots
500 grams canned sweetcorn
salt
Cayenne pepper
1 teaspoon chopped thyme
800 milliliters meat stock
1 green chilli
200 grams chicken breast
1 - 2 tablespoons lime juice
4 tablespoons roughly chopped parsley
120 grams tortilla chips to serve
Directions

Peel and finely chop the onions and garlic. Heat the butter and sweat the onions and garlic until translucent. Finely dice the bacon, add to the pan and fry briefly. Wash, core and dice the yellow pepper. Peel and dice the carrots. Add both to the pan and sweat briefly all together. Drain the sweetcorn, add to the pan, cook briefly, then season with salt and cayenne pepper and add the thyme. Add the stock. Halve the chilli, put into the pan and simmer the soup gently for about 15 minutes. Meanwhile cut the chicken breast into bite-sized pieces. Add to the soup and simmer for a further 5 minutes. Season the soup with salt and cayenne pepper and add lime juice to taste. Stir in the parsley and remove the chilli. Ladle the soup into bowls and serve with tortilla chips.
