For the roast boar

1,2 kilograms wild boar shoulder joint

4 cloves

2 onions

1 bunch vegetables

700 milliliters dry red wine

100 milliliters white wine vinegar

1 bay leaf

1 teaspoon peppercorns

1 teaspoon juniper berries

40 grams clarified butter

400 milliliters game stock

sugar

1 - 2 tablespoons cornflour

For the gnocchi

1 kilogram floury potatoes

1 egg

150 grams flour

freshly grated nutmeg

4 tablespoons clarified butter

Directions
1.
1 Put the meat in a bowl with a lid. Stick the cloves into the onions and add them to a pan with the vegetables, red wine, vinegar and spices. Bring to the boil and leave to cool. Pour over the meat, cover and marinate in the refrigerator for up to 3 days, turning from time to time.
