100 milliliters soy sauce

1 stalk lemongrass halved lengthways

350 grams prawns ready-to-cook

3 red chillies 2 finely sliced into rings and 1 finely chopped

2 garlic cloves

60 milliliters rice wine

2 tablespoons plum sauce

16 - 20 leaves/sheets rice paper 22 cm in diameter

1 handful Thai basil leaves picked

16 stalks garlic chives cut into 6-7 cm lengths
