450 grams beetroot peeled and cubed
2 tablespoons olive oil plus extra for drizzling
85 grams white quinoa rinsed and drained
250 milliliters vegetable stock
1 large egg beaten
1 onion finely diced
1 garlic clove
25 grams fresh white breadcrumbs plus extra as needed
1 pinch red chilli flakes

To serve
4 semolina bread rolls split
0,5 fennel bulb
1 small handful bean sprouts
1 tablespoon olive oil
1 large avocado
120 grams sour cream or plain yoghurt
2 large beef tomatoes sliced
40 grams rocket washed
Directions
1.
1 For the patties: Preheat the oven to 180°C (160°C fan) | 350°F | gas 4. Toss the cubed beetroot with the olive oil in a roasting dish. Roast for about 30 minutes until soft to the tip of a knife and coloured at the edges.
