180 grams white rice flour plus extra for dusting

65 grams brown rice flour

65 grams cornflour

0,5 teaspoon salt

0,5 teaspoon xanthan gum

0,25 teaspoon gluten-free baking powder

150 grams vegetable fat

3 - 4 tablespoons cold water

For the filling

500 grams frozen spinach thawed and squeezed dry

2 large eggs

1 teaspoon grated nutmeg

475 grams ricotta cheese

1 tablespoon paprika

salt

freshly ground black peppercorns

In addition

1 large egg beaten with 1 tbsp water

1 For the pastry: Combine the rice flours, cornflour, salt, xanthan gum, baking powder, and vegetable shortening in a food processor. Pulse until the mixture resembles rough breadcrumbs. Add the cold water, 1 tbsp at a time, and pulse between additions until a rough dough comes together.
