For the dough

1 tablespoon dried yeast

300 milliliters warmes water at approx. 43°C

1 tablespoon caster sugar

450 grams gluten-free flour mix plus extra for dusting

1 teaspoon xanthan gum

1 teaspoon salt

0,5 teaspoon gluten-free baking powder

1 tablespoon olive oil plus extra for greasing and drizzling

For the toppings

120 grams fromage blanc or cream cheese, if not available

120 grams crème fraîche

100 grams pancetta cut into small lardons

1 onion diced

110 grams grated Comté cheese or Gruyère

150 grams red grapes halved

1 bunch chives snipped

1 For the dough: Place the yeast in a small bowl and add 180 ml of the warm water. Stir briefly and set aside for 5 minutes, stirring in 0.5 tbsp of the sugar after 2 minutes.
