0,5 teaspoon xanthan gum

0,5 teaspoon salt

180 grams margarine at room temperature

75 milliliters ice-cold water plus extra as needed

For the filling

2 tablespoons olive oil plus extra for greasing

1 onion

1 finely chopped garlic clove

400 grams baby spinach washed

1 large egg beaten

3 tablespoons finely chopped flat-leaf parsley

175 grams feta cheese crumbled

100 grams finely chopped black olives pitted

salt

freshly ground black peppercorns

To assemble

1 medium egg beaten with 1 tbsp water
