3 tablespoons cornflour
1 teaspoon baking powder
4 large eggs separated
180 grams caster sugar
200 grams raspberry jam seedless, warmed
250 grams apricot jam warmed
300 grams marzipan
250 grams icing sugar sifted, plus extra for dusting
40 grams liquid egg white
0,5 teaspoon vanilla extract
warmes water
150 grams chopped dark chocolate
Directions

1 Preheat the oven to 180°C (160°C fan) | 350°F | gas 4. Grease and line two 20 cm | 8" springform cake tins with greaseproof paper. Sift together the flour, cornflour, and baking powder into a mixing bowl. Whisk the egg whites to semi-stiff peaks in an oil-free mixing bowl. Whisk in the sugar until thick and glossy. Beat the egg yolks before folding into the egg white mixture and then fold in the flour mixture to complete. Divide between the tins and bake until dry to the touch and risen, about 20 minutes; a toothpick should come out clean from the centre. Remove to wire racks to cool before turning out and trimming their tops flat with a serrated knife. Place one sponge on a cake stand and top with a thin, even layer of the raspberry jam. Sandwich the second sponge on top and brush the top and sides of the cake with some warmed apricot jam.
