For the dough
1 tablespoon dried yeast
300 milliliters warmes water at approx. 43°C
1,5 tablespoons caster sugar
450 grams plain gluten-free flour mix plus extra for dusting
0,5 teaspoon xanthan gum
1 teaspoon salt
0,5 teaspoon gluten-free baking powder
1 tablespoon olive oil plus extra for greasing and drizzling
For the toppings
175 grams pizza sauce or tomato passata
75 grams mozzarella grated or shredded
150 grams butternut squash peeled and cubed
1 baby courgette finely sliced
3 - 4 cep mushrooms (porcini) e.g. porcini, chanterelle, cleaned and finely sliced
0,5 red onion sliced
1 handful chopped basil

1 For the dough: Place the yeast in a small bowl and add 180 ml of the warm water. Stir briefly and set aside for 5 minutes, stirring in 1 tbsp of the sugar after 2 minutes.
