For the dough

1 tablespoon dried yeast

300 milliliters warmes water at approx. 43°C

1,5 tablespoons caster sugar

450 grams plain gluten-free flour mix plus extra for dusting

0,5 teaspoon xanthan gum

1 teaspoon salt

0,5 teaspoon gluten-free baking powder

1 tablespoon olive oil plus extra for greasing and drizzling

For the toppings

250 grams gluten-free pizza sauces or tomato passata

100 grams mozzarella grated or shredded

1 small onion finely diced

100 grams chopped olives Kalamata or black, pitted

6 slices cucumber

dried oregano

3 baby carrots sliced

2 cherry tomatoes

1 For the dough: Place the yeast in a small bowl and add 180 ml of the warm water. Stir briefly and set aside for 5 minutes, stirring in 1 tbsp of the sugar after 2 minutes.
