110 grams ground almonds

0,5 teaspoon pure vanilla extract
natural blue food colouring or turquoise
For the filling
50 grams dark chocolate
2 ripe avocados halved, pitted, peeled and diced
65 grams icing sugar sifted
35 grams cocoa powder or cocoa powder, sifted
1 teaspoon pure vanilla extract
2 - 4 tablespoons water

1 For the macarons: Reduce the aquafaba by half in a saucepan set over a moderate heat. Once reduced, pour into a bowl, cover, and chill overnight.
