1 onion
2 finely chopped garlic cloves
200 grams Arborio rice
120 milliliters dry white wine
1,5 liters gluten-free vegetable stock kept hot on the stove
100 grams finely grated Parmesan cheese plus extra to serve
150 grams frozen peas thawed
175 grams asparagus spears woody ends trimmed, spears cut into sections

freshly ground black peppercorns
For the schnitzel
100 grams plain gluten-free flour mix
2 large eggs beaten
225 grams gluten-free breadcrumbs
4 pork chops about 1.25 cm thick, boneless, trimmed
4 tablespoons sunflower oil
2 tablespoons unsalted butter
To serve
1 handful mint leaves, to serve
1 lemon cut into wedges
