300 grams chopped kale stalks removed

3 tablespoons olive oil

2 limes juiced

800 grams black-eyed beans tins, drained and rinsed

4 large tomatoes seeded and diced

3 spring onions thinly sliced

2 tablespoons roughly chopped flat-leaf parsley

salt

freshly ground black peppercorns

Directions
1.
Put the kale in a large mixing bowl with 1/2 tsp salt and half the oil and lime juice. Scrunch it all together with your hands, massaging to relax the fibres of the kale for 2 minutes.
