For Pie Dough
1 teaspoon table salt
75 milliliters water chilled with ice, increasing if needed
150 grams unsalted butter cut into small pieces
2 tablespoons granulated sugar
325 grams unbleached all-purpose flour plus extra for dusting
7 tablespoons vegetable fat chilled
For Blueberry Filling
3 - 4 tablespoons quick-cooking tapioca
1 small lemon zested to yield 1 tsp zest and juiced to yield 2 tsp juice
2 tablespoons unsalted butter cut into small pieces
900 grams fresh Maine blueberries rinsed and picked over
175 grams granulated sugar
1 pinch nutmeg
0,25 teaspoon ground allspice

Mix flour, salt, and sugar in food processor fitted with steel blade. Scatter butter pieces over flour mixture, tossing to coat butter with a little flour. Cut butter into flour with five 1-second pulses. Add shortening and continue to cut it in until flour is pale yellow and resembles coarse cornmeal with butter bits no larger than small peas (about five 1-second pulses). Turn mixture into medium bowl
