0,5 teaspoon salt

0,5 teaspoon ground cinnamon

125 grams packed dark brown sugar

75 grams sugar syrup

1,5 teaspoons baking powder

110 grams unsalted butter at room temperature

2 large eggs

2 teaspoons ground ginger

575 grams all-purpose flour plus extra for work surface

0,5 teaspoon freshly ground nutmeg

0,25 teaspoon ground clove

For Icing and Decorations

125 grams icing sugar sifted

chocolate pearl to decorate

cinnamon candy to decorate

food colouring as desired

1 tablespoon milk

Directions

Using an electric mixer set on low speed, cream together butter and brown sugar until thoroughly combined. Add the eggs and molasses and mix until incorporated. Sift together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Add the dry ingredients to the butter mixture and mix well
